--- BoP V-01 Black Moon Constellation Chiroso Anaerobic Natural --- A year after our successful bid for Black Moon Constellation―the second-highest priced Varietal lot at the 2023 Best of Panama―we went back for more. This time, we walked away with the highest price ever paid per kilo in the category. This lot was harvested under February’s waxing moon in Taurus, with only the finest cherries selected for the process. After a brief fermentation in anaerobic tanks, it was carefully dried for 40 days in the Dark Drying Room. The result is a coffee with beautifully enhanced floral notes and sweetness, while preserving the vibrant acidity and bold fruitiness that was present in the 2023 Constellation lot. This exquisite balance earned a median score of 94.1 from international judges and an official 94.13 at the 2024 BoP, showcasing what’s possible beyond the Geisha varietal.
