Their experimental approach often challenges both roasters and drinkers alike, and this coffee is no exception. This time, the lot comes from Finca Don Benjie, a farm we’ve worked with in the past at Definitive., which made this release all the more tempting to bring in. It’s a classic CCD-style ferment: starting with a lavender-like aroma, then unfolding into guava, rose, raspberry, and an array of tropical notes. There’s even a subtle nod to that familiar Ninety Plus character―unexpected and intriguing.
